Of all the dextrose derivatives, Mxt is the only product below 20, and it is because of this ratio of solids to sugars that it is often used in the food industry as a bulking agent. It is therefore very useful in cases where solids need to be incorporated into a recipe or to ensure dry dispersion.
Characteristics:
Wheat maltodextrin is one of the most widely used bulking agents in food. It is easily hydrated, cold or hot, and is highly soluble. It is often used as a sugar substitute, not in light or sugar free products (due to its high GI) but in products where it is necessary to lower the sweetness or increase the caloric load, as despite having a DE grade equivalent to 20, it has the same calories as sugar (4 per gram) and a GI even higher than sucrose (between 106 and 136).
Applications:
- In ice cream, Mxt is one of the best resources when it comes to adding solids to ice cream, especially in the case of ice creams with a high percentage of alcohol, where the PAC is too high and solids need to be added to balance.
