Fina Puigdevall’s cuisine is deeply rooted in the volcanic soil of La Garrotxa, the region in Girona where Les Cols is located.
“From here, yet with the ability to open ourselves to the world,” her dishes evoke a profound love for the land. Guided by a silent mantra of less is more, her plates—made with few elements—carry a wealth of emotion.
Ánima conveys this spirit and invites the reader to experience it through light, silence, and the pursuit of peace.
The book explores the philosophy and creations of a magical restaurant where peace and serenity can be savored.
Over the past 27 years, together with her partner in life and work, Manel Puigvert, Fina has built a restaurant that is one of a kind, honored with two Michelin stars, and reflecting every part of her soul.
Now, the chef opens her heart in Ánima, her first book.
Each of the book’s 384 pages radiates a spirit of learning, beauty, reflection, and contemplation in equal measure.
This is achieved, for example, through 82 of Fina Puigdevall’s most significant creations—each one an offering to the diner, while also capturing one of the key pillars of her cuisine: “The unchanging cycle of the seasons.”
